Ingredients
- 6 cups chopped broccoli pieces, blanched about 2 minutes, then drained well.
- 2 cups diced ham
- 1 cup grated Mozzarella
- 1/3 cup thinly sliced green onion
- 10 eggs, beaten well
- 1 tsp. Spike Seasoning
- Fresh-ground black pepper, to taste
Directions
Preheat the oven to 375F/190C, and coat a 9"x12" casserole dish with non-stick spray. Set a medium-sized pot of water over high heat and bring it to a boil. While that’s heating, dice the ham, slice the green onions, and measure out the Mozzarella cheese. Once the water is boiling, add the broccoli and cook it for just 2 minutes, then drain it in a colander in the sink and let it sit until well drained. Arrange the broccoli, ham, Mozzarella, and green onions, if you’re using them, in the prepared casserole dish. Sprinkle with Spike Seasoning and fresh-ground black pepper, then pour the beaten eggs over everything. With a fork, gently move the mixture around only until the ingredients are coated in egg. It may seem as if there isn’t quite enough egg, but don’t worry. Bake for 35-45 minutes, until the casserole is fully set and the surface has begun to brown lightly. Serve hot, with sour cream if desired. This can be stored in the fridge for at least a week and warmed in the microwave.
