Ingredients
- 3/4 cup almond flour
- 1/2 cup hemp seeds
- 3/4 cup coarsely grated Parmesan cheese
- 1/4 cup flaxseed meal
- 1/2 tsp. baking powder
- 1 tsp. Spike Seasoning
- 1/4 tsp. salt
- 6 eggs, beaten well
- 1/2 cup cottage cheese, rinsed and drained
- 1/3 cup thinly sliced green onion
Directions
- Set the cottage cheese in a fine-mesh strainer in the sink, rinse it thoroughly under cold water, and leave it to drain. Heat the oven to 325F/165C, then coat a loaf pan with non-stick cooking spray. A 9 inch x 5 inch loaf pan is the size used here.
- In a mixing bowl, combine the almond flour, hemp seeds, Parmesan cheese, flaxseed meal, baking powder, Spike Seasoning, and salt.
- Whisk the eggs until the whites and yolks are fully blended, then stir in the rinsed and drained cottage cheese.
- Slice enough green onions thinly to measure 1/3 cup.
- Add the egg mixture and the green onions to the dry mixture, stirring until everything is evenly incorporated. Spoon the batter into the prepared loaf pan.
- Bake for about 55 minutes, until the bread is browned on top, feels set when touched, and a toothpick inserted into the loaf comes out clean.
- You can slice and freeze this bread. It reheats nicely, but don’t warm it for too long or the texture can turn hard.
