Ingredients
- 1 T olive oil
- 1 medium onion, chopped small
- 1 lb. lean ground beef
- 1 pkg. Hot Turkey Italian Sausage
- 1 jar low-sugar pasta sauce
- 1/2 cup chopped fresh basil
- 2 cups cottage cheese
- 4 eggs, beaten well
- 1/2 cup coarsely grated Parmesan cheese
- 1 tsp. Italian herb blend
- 1 tsp. garlic powder
- 4 Folios Parmesan Cheese Wraps
- 2 cups grated Mozzarella cheese
- Additional 1/3 cup coarsely grated Parmesan cheese to sprinkle over the top
Directions
- Set the oven to 375F/190C, then coat a deep rectangular casserole dish with non-stick spray. Warm the olive oil in a large, deep skillet over medium-high heat, add the chopped onion, and cook it until the edges just begin to take on color.
- Move the onion to one side of the skillet. Add the ground beef, then squeeze the Italian sausage from its casings into the pan. Cook the meats, using a turner to break them into small pieces, until they are well browned and the moisture in the pan has cooked away.
- Pour the Rao's sauce into the meat mixture, rinsing the jar with a little water first if you want to catch the last bit. Lower the heat and let the sauce bubble gently until it has thickened, about 10 minutes.
- As the sauce cooks down, chop the basil, or use Herb Scissors if you have them. Stir the basil into the thickened sauce, then take the pan off the heat.
- In a separate bowl, combine the cottage cheese or ricotta, beaten eggs, 1/2 cup Parmesan if you are using it, garlic powder, and dried herbs.
- Slice the Folios in half. Arrange them across the bottom of the prepared dish with the straight sides lined up against the edges. For this dish size, 2 Folios per layer was enough, though a larger casserole dish might take 3.
- Spoon half the meat sauce over the Folios. Add half the cottage cheese mixture on top, then scatter over half the Mozzarella.
- Build the next layer the same way: Folios, meat sauce, cottage cheese mixture, and Mozzarella. Finish with the grated Parmesan on top, if you are using it.
- Bake the Low-Carb No-Noodle Lasagna with Sausage and Basil for 40-45 minutes. The lasagna shown baked for 45 minutes, but begin checking it after 35 or 40 minutes.
- Serve it hot. Leftovers may be frozen and warmed up another time.
