Ingredients
- 8 large apples
- 2 tsp. coconut oil
- 1/3 cup sweetener of your choice, or slightly more
- 1 tsp. ground cinnamon
- 1/4 tsp. apple pie spice, optional
- 1/4 C dried cranberries
- 1 C oatmeal
- 1/3 C almond flour
- 1/3 C sweetener of your choice or slightly more
- 3 T melted coconut oil
Directions
- Heat the oven to 400F (200C). Lightly coat a glass or crockery baking dish, about 9″ x 13″, with coconut oil or non-stick spray. In a large non-stick frying pan set over very low heat, melt 2 tsp. coconut oil, butter, or trans-fat free margarine.
- Peel the apples one by one, slice them, and add them to the frying pan as you go. Once all the apples are in the pan, stir in the sweetener, cinnamon, and apple pie spice. Cook for a few minutes, then, when the apples have begun to soften, mix in the dried cranberries and continue cooking for a few minutes longer.
- As the apples cook, add the oatmeal to a food processor or the bowl of an immersion blender. Process for about 30 seconds, stopping when the oats are just beginning to become finely ground. Add the almond meal and the other 1/3 cup sweetener, then pulse until mixed. Melt the coconut oil, butter, or margarine, pour it in, and pulse briefly to bring the crumble together.
- Transfer the cooked apple mixture to the bottom of a 9 X 13 inch crockery or glass casserole dish. If a metal pan is what you have, coat it very generously with non-stick spray. Scatter the crumble topping evenly over the apples.
- Bake for 30 minutes, until the filling is gently bubbling and the top is lightly browned. Serve hot. If you’re not dieting, whipped cream or ice cream would be lovely on top.
