Low-Sugar Fresh Peach Frozen Yogurt
Fresh peaches and Greek yogurt churn into a creamy lower-sugar frozen dessert with bright fruit flavor and a simple prep.
Prep 15 min · Total 45 min · Makes about 5 cups

Ingredients
- Generous 2 cups of peeled and diced fresh peaches
- 1/2 cup sugar-free apricot preserves or any low-sugar apricot jam
- 1/2 cup sweetener of your choice
- 2 cups Greek Yogurt
Directions
- If your ice cream maker uses a freezer bowl, make sure the container is thoroughly frozen before you begin. Use the instructions for your particular machine.
- Peel the peaches, take out the pits, and chop the fruit into small pieces. If the skins are stubborn, dip the peaches in a pan of boiling water for a few seconds to loosen them.
- Add the peaches to a food processor with the steel blade attached, and blend until smooth.
- Add the sugar-free apricot preserves, your chosen sweetener, and the Greek Yogurt. Process only until everything is evenly mixed. If you would rather use more peaches in place of the apricot preserves, use the peach preserve mixture described at the end.
- Set the container in the ice cream maker and put the scraper blade where it belongs.
- Place the lid on the machine, start the motor, and pour in the peach-yogurt mixture while it runs.
- Churn the yogurt with the blade moving for 25-35 minutes. If it needs the full time, 35 minutes is fine.
- If you have frozen yogurt left over, freeze it for later. After it comes out of the freezer, let it sit at room temperature for about 20-30 minutes to soften, or microwave it on medium-low for about 1 minute or 2.
- If you do not want to use the sugar-free preserves, or if you have plenty of peaches to use up, make your own peach preserve mixture. Peel and dice 1 cup of peaches, then puree them with 1/4 cup sweetener of your choice. Transfer the mixture to a small pan and simmer it over very low heat, stirring often, until it thickens and cooks down to 1/2 cup. Cool it very well before adding it to the other ingredients.
