Low-Sugar Mango Sorbet

Ingredients

  • 2 large very ripe mangoes
  • 1/2 cup water
  • 1/2 cup granulated sweetener of your choice
  • 1 1/2 T fresh lime juice

Directions

  1. Combine the water and sweetener in a small pan, then heat until the mixture comes to a boil. Turn off the heat and leave it to cool while you peel and cut the mangoes.
  2. To prep the mangoes, cut down both sides of the flat pit, keeping the knife as close to the seed as you can. Trim off any remaining fruit attached to the seed, remove the peel, and chop the mango flesh.
  3. Add the chopped mango and lime juice to a food processor. Blend for about 45 seconds, until the fruit is very smooth.
  4. Pour in the cooled simple sugar mixture and process for about 45 second more, until the mixture is completely smooth with no lumps.
  5. Transfer the mixture to a plastic bowl with a snug lid and place it in the freezer.
  6. Every 30 minutes, take the bowl out of the freezer, scrape the frozen mixture from the edges, and whisk it back into the softer center.
  7. The sorbet will take 3-4 hours to freeze, depending on the temperature of your freezer. For a slightly firmer texture, freeze it 4 hours next time. Spoon into individual bowls and serve.
