Ingredients
- 5 oz baby spinach
- 3 mandarin oranges, peeled and segmented
- 3/4 cup pomegranate arils
- 1 medium avocado, diced
- 1/4 cup sliced almonds, toasted
- 1/4 cup chopped walnuts
- 2 Tbsp white wine vinegar
- 1 1/2 Tbsp sugar
- 1/8 tsp salt
- 1/2 cup light mayonnaise
- 1 1/2 Tbsp honey
- 1 Tbsp poppy seeds
- 1 Tbsp milk, if needed
Directions
- For the dressing, whisk the vinegar, sugar and salt in a small bowl until the grains have dissolved. Add the mayonnaise, honey and poppy seeds, then whisk again until smooth and blended. If you want a looser dressing, stir in the milk. Refrigerate until you are ready to use it.
- For the salad, arrange the spinach, mandarin oranges, pomegranate arils, avocado, almonds and walnuts in a salad bowl. Spoon over as much dressing as you like, or dress the portions individually. Serve right away.
