Mango Avocado Salsa
A chunky mango-avocado salsa with lime, cilantro and red onion that brings creamy, tangy sweetness to warm tortilla chips.
Prep 15 min · Total 45 min · Makes about 5 cups

Ingredients
- 1 large mango, cut into 1/2-inch chunks, about 1 cup
- 1/4 cup cilantro, chopped
- 1/2 small red onion, minced about 1/4 cup
- 2 tablespoons freshly-squeezed lime juice, from 1 large lime
- 3/4 teaspoon kosher salt, plus more to taste
- 4 medium, ripe Hass avocados
Directions
- Put the mango, cilantro and red onion in a large mixing bowl. Use a big spoon to turn everything over together until it is evenly mixed.
- 30 minutes before you plan to serve, peel the avocados and cut them into 1/2 to 1-inch chunks. Add the avocado to the mango mixture along with the lime juice and salt, then fold carefully so the avocado stays in happy little pieces instead of turning into mash.
- Move the salsa to the refrigerator for 30 minutes so the flavors can settle in together. After that 30 minutes, take a bite and add more salt if you think it needs it.
- Serve with warm tortilla chips. Cover any leftovers and keep them in the refrigerator for up to 2 days.
