Ingredients
- 2 Tbsp white miso
- 2 Tbsp real maple syrup
- 1 Tbsp melted butter
- 1 tsp grated fresh ginger
- 1 tsp soy sauce
- 1 lb. carrots
Directions
- Heat the oven to 400ºF. Add the miso, maple syrup, melted butter, grated ginger, and soy sauce to a bowl, then stir until the mixture is smooth.
- Peel the carrots, then cut them into about 1-inch pieces. Make the thicker carrot sections a little shorter and the thinner sections a little longer.
- Set the carrot pieces on a nonstick baking sheet, or use a baking sheet covered with foil. Pour the maple miso butter mixture over the carrots, then toss until every piece is coated.
- Arrange the carrots across the pan with a bit of room around each piece. Don’t skip this little bit of fussing, because that space is what helps the maple miso butter caramelize.
- Roast the carrots for 15 minutes, then give them a stir. Spread them out again, then put the pan back in the oven for another 15 minutes. If the carrots are golden brown, they’re done. If they need more color, stir 1 more time and roast for an additional 5-10 minutes.
