Ingredients
- 1 lb fresh strawberries, washed and dried well
- 8 oz semi-sweet chocolate, chopped
- 8 oz Mascarpone cheese
- Chopped pistachios or toasted almonds or melted white chocolate, optional
Directions
- With a paring knife, remove the strawberry stems and hollow out the centers, taking care to leave the bottoms and sides intact. Add the Mascarpone cheese to a piping bag or a resealable bag, then snip the tip from one corner. Pipe the cheese into the hollowed strawberries. Arrange them on a wax paper-lined baking sheet and set them aside.
- Put the chocolate in a heatproof bowl over a saucepan of simmering water. Warm it, stirring now and then, until the chocolate is fully melted and silky.
- Dunk each filled strawberry into the melted chocolate, letting the extra drip back into the bowl. Return the coated berries to the wax paper-lined baking sheet; if you're using nuts, scatter them over the chocolate before it firms.
- Move the sheet to the refrigerator and chill until the coating is firm, about 15 minutes. If you like, finish with a drizzle of melted white chocolate. For best results, serve right away.
