Ingredients
- 2 cups mashed potatoes
- 1 large egg
- 1 tablespoon freshly grated Parmesan cheese
- Kosher salt to taste
- 2 teaspoons unsalted butter
- 2 teaspoons vegetable oil
Directions
- In a small bowl, mix the mashed potatoes with the egg, Parmesan and salt until evenly combined. Chill the mixture until it is very cold.
- Warm the butter and oil in a 12-inch frying pan over medium-high heat. Separate the potato mixture into 6 portions, shape each one into a flattened round and set them in the pan with room around each cake.
- Cook the potato cakes until they begin to firm up, about 2 minutes. Reduce the heat to low and continue cooking until the undersides are golden brown, about 6 minutes.
- Turn the heat back up, flip the cakes and cook until the second side starts to set, about 2 minutes. Lower the heat again and cook until deeply browned, about 5 minutes.
- Use a spatula to lift the potato cakes out of the pan, then drain them on paper towels. Serve warm.
