Ingredients
- 2 firm apples, peeled cored, and quartered
- 3 tablespoons unsalted butter plus extra, at room temperature
- 1 teaspoon ground cinnamon
- 4 tablespoons maple syrup, plus more for serving
- 3 eggs
- 1/2 cup milk
- 1/2 teaspoon vanilla extract
- Pinch of salt
- 6 pieces lightly salted matzoh
Directions
- Cut every apple quarter the long way into 4 pieces. Set a saute pan over medium-high heat, melt 2 tablespoons of the butter, and add the apples. Cook, turning the slices now and then, until they soften and pick up a little color, about 6 minutes. Stir in the cinnamon along with 2 tablespoons maple syrup, cook for 1 minute, then take the pan off the heat. Move the apples into a covered dish so they stay warm.
- In a bowl, beat the eggs with the milk, vanilla extract, salt, and the remaining 2 tablespoons maple syrup. Transfer this mixture to a pie dish.
- Put the saute pan back over medium-high heat and melt 1 tablespoon of the butter. Once it is hot, lift several matzoh pieces from the egg mixture and lay them in the pan. Cook for 1 1/2 minutes. As they cook, spoon a teaspoon of the egg mixture onto spots that need a little lift, or use it to help smaller broken bits hold together. Turn the matzoh with a spatula, then cook the other side until it is browned, 1 1/2 minutes more. Add more butter to the pan as needed and continue the same way with the rest of the matzoh and egg mixture.
- Serve the matzoh straight from the skillet with the warm apple slices and extra maple syrup.
