May Day Pie

Ingredients

  • For the crust:
  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon sugar
  • 10 tablespoons unsalted butter, frozen
  • 2 tablespoons bourbon, chilled
  • 3 tablespoons ice water
  • For the filling:
  • 2 medium eggs, beaten
  • 3/4 cup flour
  • 1/2 cup granualted sugar
  • 1/2 cup dark brown sugar
  • 1 cup unsalted butter, melted
  • 1/4 cup dark corn syrup
  • 1/4 cup bourbon
  • 1 cup dark chocolate chips
  • 1/2 cup chopped walnuts
  • 1/2 cup chopped pecans

Directions

  1. Combine the flour, salt, and sugar in a food processor and pulse to mix. Drop in the butter a tablespoon at a time, pulsing as you go, until the dough has little pea-sized bits throughout. Add the bourbon one tablespoon at a time, then add the ice water, and pulse just until the dough looks damp and starts coming away from the sides. Shape it into a 1/4-inch thick disc, wrap it tightly in plastic wrap, and chill it for a minimum of two hours. Press the chilled dough into a pie plate.
  2. Move the oven rack to the center position and heat the oven to 350 degrees F. In a large bowl, whisk the eggs, flour, and both sugars until they’re combined. Stir in the melted butter, then the corn syrup, keeping the mixture moving as you add them. Fold in the bourbon, chocolate chips, and nuts. Pour the filling into the prepared pie crust and bake until the top is set and golden, about 55 minutes. Let it cool slightly, then serve.
