Ingredients
- 1 tablespoon olive oil
- 1 small onion, diced small
- 3 cloves garlic, roughly chopped
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon paprika
- 1 whole small sprig fresh oregano
- 1/2 cup water
- Kosher salt and freshly ground black pepper
- 4 to 8 eggs
Directions
- Warm the olive oil in a large sauté pan with high sides set over medium heat. Add the onions and garlic, then cook them gently for about 5 minutes, just until they begin to soften.
- Add the tomatoes, cumin, coriander, paprika, oregano and water. Stir everything together, then taste the sauce and add salt and pepper as needed. Bring it up to a boil, lower the heat, cover the pan, and let it simmer for 25 minutes.
- Take off the lid and add the eggs to the bubbling sauce one by one, leaving a few inches of space between them. Cover the pan again and keep simmering for about 5 minutes for soft yolks, or continue until the whites are done and the yolks are as set as you like.
- Spoon the eggs and sauce into shallow bowls, and serve with thick toasted bread for soaking up the sauce and yolks.
