Ingredients
- 1 tablespoon peanut oil
- 1/2 pound ground pork
- 1/2 teaspoon dried chile flakes
- 3 scallions, green and white parts sliced and separated
- 3 garlic cloves, minced
- 1 large carrot, diced small
- 3 baby bok choy, thinly sliced
- 1 tablespoon sugar
- 2 tablespoons white miso paste
- 1 tablespoon tamarind concentrate or tamarind paste
- 1 1/2 cups stock or broth
- Juice of one small lime
- 1/2 cup cashews, roughly chopped
Directions
- Warm the oil over medium-high heat in a large sauté pan. Add the pork and cook until browned, using a wooden spoon to nudge it into small bits as it cooks, about 5 minutes.
- Stir in the white scallion slices and garlic, then cook them briefly, about 30 seconds.
- Add the carrot and bok choy. Toss everything together so the vegetables mingle with the aromatics, and cook for about 1 minute.
- In a separate bowl, whisk the sugar into the miso paste, then add the tamarind concentrate, stock, and lime juice and mix until smooth. Pour the sauce into the pan with the pork and vegetables, then let it bubble gently for 10 to 15 minutes, until it has reduced and thickened.
- Fold in the scallion greens and chopped cashews. Spoon it over cooked rice or rice noodles.
