Ingredients
- 1 small onion, finely diced
- 1-2 tsp. olive oil, depending on the pan
- 1/2 tsp. ground cumin
- 1/4 tsp. ground Ancho chile pepper
- 1 can tomatoes with juice
- 1 can black beans, rinsed and drained well
- 1 can diced green chiles
- 4 – 6 eggs
- 1/4 – 1/2 cup grated cheese
- Chopped cilantro for garnish, optional
Directions
- Heat the oven or toaster oven to 450F/230C. Coat either 1 large casserole dish, 3 medium gratin dishes, or 6 individual gratin dishes with olive oil or non-stick spray.
- Pour the black beans into a colander set in the sink, then run cold water over them until the bubbles are gone. Leave them to drain while you cook the onions.
- Warm the olive oil in a small, deep-sided frying pan, then cook the onions for about 2 minutes. Stir in the ground cumin and Ancho chile pepper, and cook for another 2-3 minutes. Add the tomatoes with their juice, the drained beans, and the diced green chiles, then keep the mixture at a very gentle simmer for about 20 minutes, until it has thickened a bit.
- Choose your baking setup: 1 large casserole with 6 eggs, 3 medium casseroles with 2 eggs each, or 6 individual casseroles with 1 egg each. Spray the dishes with olive oil or non-stick spray.
- Divide about half of the tomato-bean mixture among the bottoms of the dishes. Crack the eggs gently over that layer. Spoon the remaining mixture around the eggs, doing your best to leave the yolks uncovered.
- Bake the casserole or gratins for about 5 minutes, just until the eggs begin to set but still look quite loose. This will take longer if you are using 1 large casserole dish.
- Take the dish or dishes out of the oven, then switch the oven or toaster oven to broil. Sprinkle the cheese over the top, return the dish or dishes close to the broiler, and broil for 2-3 minutes, until the cheese is melted. Pull them out while the yolks are still soft.
- Serve hot, with whole wheat flour tortillas for dipping into the egg if you like. Salsa and sour cream are good alongside, too.
