Ming Tsai's Crazy Chicken-Rice Noodle Stir-Fry
Slippery rice noodles and ground chicken get tossed with shallots, basil, scallions, fish sauce, lime, and sambal for a spicy, tangy stir-fry.

Ingredients
- 8 ounces rice noodles
- 2 tablespoons Thai fish sauce
- 2 tablespoons lime juice
- 1 teaspoon sugar
- 1 tablespoon sambal
- 3 tablespoons canola or grapeseed oil
- 3 shallots, sliced thinly
- 1 pound ground chicken
- 1/2 cup scallions, green and white parts, sliced
- 1/4 cup basil , thinly sliced plus more for garnish
- 1 lime, quartered
Directions
- Put the noodles in a large bowl and pour warm water over them to cover. Let them sit for 20 minutes, until tender, then drain them in a colander.
- As the noodles soak, whisk the fish sauce, lime juice, sugar, and sambal together.
- Set a wok or large skillet over high heat and add the oil. Once it’s hot, add the shallots and stir-fry them for one minute. Add the ground chicken and cook for 3 minutes, stirring the whole time.
- Add the drained noodles and sauce to the wok, and stir until everything is warm. Add the basil and scallions, give it another stir, and serve.
- Finish with the lime wedges and basil for garnish.
