Ingredients
- 2 Tbsp red miso or 3 Tbsp white miso
- 2 Tbsp sake
- 2 Tbsp sugar
- 2 teaspoons soy sauce
- 4 6-ounce skinless salmon fillets
Directions
- In a small bowl, stir together the miso, sake, soy sauce, and sugar. Taste the mixture and tweak the balance however you like. Pour half into a container that will hold the salmon fillets comfortably, add the fish, then spoon the remaining mixture over the top. Turn or nudge the fillets as needed so they are covered with the miso sauce.
- Cover the container and refrigerate the salmon for at least 30 minutes, or as long as overnight. When you are ready to cook, line a broiling pan with aluminum foil. Lightly coat the foil with vegetable oil, then arrange the salmon fillets on it. Leave a smooth, thin layer of marinade across the top of each piece.
- Set the pan in the oven so the fillets are no closer than about 6 inches from the broiler element. Broil for 6-10 minutes, adjusting for the thickness of the fish and the strength of your broiler.
- Stay nearby while the salmon cooks. Since the marinade includes sugar, the glaze can go from browned to burned pretty quickly. If the surface begins to char before the fish is done, move the pan to a lower oven rack.
- Serve with rice and stir-fried vegetables.
