Ingredients
- 3 to 4 tablespoons extra virgin olive oil
- 1 cup chopped yellow onion, including some chopped greens from scallions or green onions
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- Kosher salt
- 1 pound ground turkey, preferably ground turkey thighs
- 1 teaspoon chipotle powder or chili powder, or to taste
- 2 tablespoons chopped fresh parsley or cilantro
Directions
- Warm 2 tablespoons olive oil in a large skillet over medium high heat. Add the chopped onions and bell pepper, then cook for a couple minutes, until they have softened.
- Stir in the garlic and cook for 30 seconds more. Slide the vegetables over to one side of the skillet, and shift the pan so that side is away from the burner. The open side of the skillet should sit directly over the heat.
- Pour 1 or 2 more tablespoons of oil into the empty side of the pan so it is coated. Add the ground turkey in craggy pieces, then season it with salt and chipotle or chili powder.
- Leave the turkey alone until the underside browns, then flip the pieces so the second side can brown too. When the turkey is just cooked through, fold in the onions and peppers, and add more salt and chili powder to taste. Take the skillet off the heat.
- Mix in the chopped fresh parsley or cilantro.
- Serve it as is, or spoon it over steamed rice or noodles.
