Ingredients
- 2 1/2 cups rolled oats, Old Fashioned
- 1 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 3/4 tsp salt
- 1 cup unsalted butter, softened but still slightly firm
- 1 cup dark brown sugar
- 1 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 1 pkg. semi-sweet chocolate chips
- 1 milk chocolate bar, chopped
- 1 1/2 cups chopped walnuts
Directions
- Heat the oven to 375 degrees. Pour the oats into a food processor and run it until they become very fine, almost like flour, about 2 – 3 minutes.
- Scrape the ground oats into a large mixing bowl. Add the flour, baking soda, baking powder, and salt, then whisk for 20 seconds and put the bowl aside.
- In a stand mixer with the paddle attachment, beat the butter with the brown sugar and granulated sugar until the mixture is evenly combined.
- Add the eggs one at a time, mixing after each addition, then mix in the vanilla. Turn the mixer to low and gradually add the dry mixture, stopping when the dough is just shy of fully blended.
- Mix in the chocolate chips, chopped chocolate, and walnuts, if you are using them. If you want a few extra chocolate chips on top for a prettier cookie, save some before mixing them into the dough. Portion the dough into 2 oz. scoops, nearly 1/4 cup each, and form them into rounded balls. At higher altitude, shape them a little taller, more like ovals, to help limit spreading.
- Place 9 dough balls on an 18 by 13-inch baking sheet lined with parchment paper or a silicone baking mat, leaving about 3-inches between them. Chill the dough that is waiting its turn to bake.
- Bake until the cookies are almost set but still a touch underdone, about 10 minutes. Leave them on the baking sheet for several minutes, then move them to a wire rack to finish cooling. Continue the same way with the remaining dough. Store the cookies in an airtight container.
