Ingredients
- 4 tablespoons unsalted butter
- 1 cup creamy peanut butter
- 1/2 cup light corn syrup
- 1/3 cup light brown sugar
- Pinch salt
- 4 cups corn flakes, lightly crushed
- 1/3 cup salted peanuts, chopped and divided
- 1 teaspoon pure vanilla extract
- 4 ounces bittersweet chocolate, finely chopped
Directions
- Line an 8- by 8-inch baking pan with foil. Set a medium saucepan over medium heat and melt the butter. Add the peanut butter, corn syrup, brown sugar and salt, then cook, stirring, until the mixture is melted together and smooth.
- Add the corn flakes, 1/4 cup peanuts and vanilla, stirring only until everything is combined. Scrape the mixture into the prepared pan and even out the surface.
- Melt the chocolate in a heatproof bowl set over a pan of barely simmering water, or use the microwave, stopping when it is just melted. Spread the chocolate across the top of the bars, then scatter on the remaining chopped peanuts. Refrigerate until firm, about 2 hours. Lift from the pan and cut into 2-inch squares.
