Nutella Stuffed Deep Dish Chocolate Chip Skillet Cookie

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup lightly packed light brown sugar
  • 1/3 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 large egg
  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 1/3 teaspoon salt
  • 1/2 cup dark/semi-sweet chocolate chips
  • 1/2 cup nutella

Directions

  1. Heat your oven to 350° F | 175°C. Line a 9" cast iron skillet, or a pie dish, with baking/parchment paper, then put it aside.
  2. In a large bowl, whisk together the butter, sugar and vanilla until the mixture looks pale and creamy. Add the egg and whisk until it’s fully mixed in. Tip in the flour, baking soda and salt, then stir everything together just until the dry ingredients disappear into the wet. Fold through half of the chocolate chips, then spoon 1/2 the cookie dough into the prepared skillet.
  3. Warm the Nutella in the microwave for 30 seconds, just until it loosens up and is easier to spread. Spoon it over the cookie dough in the skillet, spreading it evenly and stopping 1-inch from the edges.
  4. Add the remaining cookie dough on top, using the back of a metal spoon to smooth it out, and your fingers too if that’s what gets the job done. Scatter the remaining chocolate chips over the top. Bake for 25-30 minutes if you want a gooey cookie, or after 30 minutes, cover with aluminium foil and bake for a further 10 minutes if you want it set. Let it cool for about 10 minutes before serving.
