Old Bay Corn Muffins

Ingredients

  • 1 1/2 cups medium grind cornmeal
  • 1/2 cup all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons low sodium Old Bay seasoning
  • 1/2 teaspoon chili powder
  • 1 teaspoon salt
  • 1 1/4 cups buttermilk
  • 1 egg
  • 2 tablespoons butter, melted, plus more for greasing tin
  • 1 cup grated sharp cheddar cheese

Directions

  1. Set a rack in the center of the oven, then heat the oven to 375 degrees F. Rub a muffin tin with butter so the muffins release easily.
  2. In a medium bowl, combine the cornmeal, flour, baking powder, Old Bay, chili powder, and salt. In a small bowl, beat the buttermilk and egg together, then pour that into the dry mixture and stir just until it comes together. Mix in the melted butter, then fold in the cheese.
  3. Spoon the batter into the buttered tin, filling each cup 3/4 of the way. Bake until a cake tester poked into the center of a muffin comes out clean, about 15 minutes. Let the muffins rest for 5 minutes, then move them to a wire rack. Serve warm.
