Ingredients
- Cooking spray or extra virgin olive oil
- 2 large eggs
- 1 tablespoon milk
- 1 tablespoon grated cheddar cheese
- 1 tablespoon finely chopped red bell pepper
- 1 teaspoon finely chopped chives or green onion greens
- Pinch salt
- Pinch of black pepper
Directions
- Lightly coat the inside of a roomy microwave-safe mug with cooking oil spray, or rub it with olive oil. Add 2 eggs and 1 tablespoon of milk, then whisk them together with a fork. Stir in the grated cheese, chopped red bell pepper, and chives, then season with a sprinkle of salt and pepper. Mix again with a fork until everything is evenly combined. Cook in the microwave in 20 to 30 second bursts, stirring as you go: start with 30 seconds on high, then take the mug out and stir with a fork.
- Put the mug back in the microwave and heat it for another 20 to 30 seconds. The exact timing, 20 or 30 seconds, will depend on your microwave, so expect to adjust a bit. When you see some firmer bits of egg starting to appear, pull it out and stir once more.
- Microwave the mug again for another 20 to 30 seconds, just until the omelette is set.
