Ingredients
- 1 Tbsp olive oil
- 2 cloves garlic, minced
- 1 lb hot or sweet turkey sausages, casings removed
- 1 jar jar marinara sauce
- 1 can diced tomatoes
- 3/4 cup low-sodium chicken broth
- 1/2 cup water
- 1 pkgs. refrigerated three cheese tortellini
- 4 cups packed fresh spinach, roughly chopped
- 3 Tbsp chopped fresh parsley
- Freshly ground black pepper
- 3 Tbsp chopped fresh basil
Directions
- Warm the olive oil in an extra-large skillet or a pot set over medium-high heat. Add the garlic and cook for 30 seconds, then add the sausage. Break it into pieces and continue cooking, stirring now and then, until the sausage is fully cooked.
- Pour in the marinara sauce, tomatoes, chicken broth and water, and bring the mixture to a gentle boil. Add the tortellini, turn it through the sauce, and press it down so it is mostly covered. Lower the heat to medium-low, cover the pan, and simmer until the tortellini is tender and cooked through, about 10 minutes, stirring once midway.
- Add the spinach and parsley, season with black pepper to taste, and add salt only if it truly needs it. Fold everything gently until the spinach wilts. Stir in the basil and serve warm.
