Orange Pull-Apart Loaf

Ingredients

  • 1 cup lukewarm water
  • 2 1/4 teaspoons yeast
  • 3 ounces semolina flour
  • 2 tablespoons honey
  • 13 1/2 ounces bread flour
  • 2 tablespoons fresh orange juice
  • 1 large egg
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon orange extract
  • 4 tablespoons unsalted butter, softened
  • Non-stick cooking spray
  • 1/3 cup granulated sugar

Directions

  1. In the bowl of a stand mixer with the dough hook in place, mix the water, yeast, semolina flour, and honey. Stir everything together, then leave it alone until the mixture looks bubbly and foamy, about 10 minutes.
  2. Add the bread flour, orange juice, egg, and salt. Mix on low speed until the dough becomes smooth and stretchy, about 10 minutes. Add the vanilla extract, orange extract, and butter, then keep kneading until the butter has disappeared into the dough and it looks glossy and elastic, about 5 minutes longer.
  3. Cover the mixing bowl with plastic wrap and leave the dough to rise until it has doubled, about an hour.
  4. Lightly flour your work surface and transfer the dough onto it. Knead it for a moment, then divide it into about 16 pieces; they do not need to be perfectly even. Shape each piece into a ball.
  5. Move an oven rack to the center position and heat the oven to 350 degrees F. Coat a tall, 8-inch round cake pan with non-stick cooking spray; a springform pan is fine, too.
  6. Put the sugar on a small plate. Roll each dough ball in the sugar so it is coated, then place the pieces loosely in the prepared pan. Scatter any leftover sugar over the top. Cover the pan with plastic wrap and let the dough rise again until doubled, about 30 minutes.
  7. Once the buns have risen, take off the plastic wrap and bake until the top is browned, about 35 minutes. Take the pan out of the oven and cool it on a rack for 5 minutes, then turn the loaf out and let it finish cooling on the rack. If you want the crust to stay softer, drape the bread with a clean kitchen towel.
