Ingredients
- 1 Caribbean red papaya, peeled, seeded, and roughly diced
- 1 habanero pepper, stemmed and seeded
- 1/4 cup diced shallots
- 1/4 cup white vinegar
- 1/4 cup fresh juice, from 3 to 4 limes
- 1 tablespoon dark brown sugar
- 1 teaspoon freshly minced garlic
- 1 teaspoon freshly minced ginger
- 1/8 teaspoon ground allspice
- 1/8 teaspoon ground cloves
- Pinch ground cinnamon
- Pinch ground nutmeg
- Kosher salt and freshly ground black pepper
Directions
- In the blender jar, combine the papaya and habanero(s). Add the shallots, pour in the vinegar and lime juice, and blend in the brown sugar. Drop in the garlic and ginger, followed by the allspice, cloves, cinnamon, and nutmeg. Blend until the sauce is smooth.
- Pour the puree into a medium saucepan and set it over medium-high heat until it comes to a boil. Turn the heat down to low, then let it bubble gently for 10 minutes, stirring often.
- Add salt and pepper until the flavor is where you want it. Let the hot sauce come down to room temperature. Spoon or pour it into an airtight container, and keep it in the refrigerator for up to a week.
