Paprika Roast Chicken

Ingredients

  • 1 chicken
  • 2 tablespoons paprkia
  • 2 tablespoons kosher salt
  • 2 teaspoons garlic powder
  • 1 teaspoon cayenne pepper

Directions

Heat your oven to 400 degrees. Gently slide your fingers under the chicken skin to separate it from the meat, taking care not to rip it. For the breast, work on half from the underside of the bird, then reach in through the opening at the top to loosen the other half. The legs take a little more coaxing; start at the base of each leg and ease your way along. Stir together the paprika, salt, garlic powder, and cayenne pepper. Tuck the spice mixture under the skin anywhere you can reach, and add some inside the chicken as well. Hold back about a tablespoon for finishing. Set the chicken in a roasting pan and put it in the oven. Roast for about 50 minutes to an hour, until the temperature is right around 165. Take it out and give it 10 minutes to rest. Carve it, serve it, and finish with a little of the reserved seasoning.
