Ingredients
- 4 large tomatoes, 1 1/2 lbs, sliced into halves
- 1 Tbsp olive oil
- 1 clove garlic, finely minced
- Salt and freshly ground black pepper
- 1 oz asiago cheese, finely shredded, 1/3 cup
- 1 oz parmesan cheese, finely shredded
- 1 1/2 tsp Italian seasoning
Directions
- Heat your oven to 425 degrees. Set the tomatoes on a baking sheet.
- In a small bowl, mix the olive oil and garlic together. Brush that over the tomatoes, doing your best to share the garlic around fairly evenly, then add salt and freshly ground black pepper to taste.
- Combine the asiago and parmesan, then scatter the cheeses evenly over the tomatoes, using about 1 Tbsp over each. Sprinkle the Italian seasoning evenly over the top.
- Bake for about 15 – 18 minutes, until the tomatoes are tender and the cheeses have turned golden. Serve warm.
- If you’d rather use fresh herbs, you can swap them in for the dried Italian seasoning; basil, oregano, thyme or parsley will all work.
