Parmesan Chicken

Ingredients

  • 1 clove garlic, minced
  • 1 stick butter, melted
  • 1 cup dried bread crumbs
  • 1/3 cup grated Parmesan cheese
  • 2 Tbsp chopped fresh parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic salt
  • A large pinch of Italian seasoning, herb mix
  • 1/8 teaspoon ground black pepper
  • 2 lbs of skinless, boneless, chicken meat, cut into 1-inch to 2-inch wide pieces

Directions

  1. Heat your oven to 450 degrees F. Blot the chicken pieces well with paper towels; a dry surface helps the breading bake up instead of turning steamy.
  2. In a small bowl, mix the minced garlic with the melted butter. In a separate bowl, combine the Parmesan, breadcrumbs, parsley, garlic salt, salt, pepper, and Italian seasoning.
  3. Working piece by piece, dip the chicken into the garlicky butter, then coat it in the Parmesan breadcrumb mixture. If the chicken is very cold, the butter may start to thicken and cling too heavily; when that happens, warm the butter back up.
  4. Arrange the coated chicken in a roasting dish that is 9x13 (or larger), leaving a little space between the pieces. If everything is crowded, use more than 1 roasting pan. Drizzle the remaining garlic butter over the chicken.
  5. Bake, uncovered, at 450 degrees F for 15 minutes, or until the chicken is cooked through and the juices run clear. The bottom will brown more than the top, so don’t let that throw you.
