Pasta with Corn, Arugula, and Tomatoes

Ingredients

  • 1 1/2 tablespoons red-wine vinegar
  • 3 tablespoon olive oil
  • 1/2 cup cooked corn kernels
  • 1 pound tomatoes, peeled, stemmed, and chopped
  • 1/4 cup scallion, thinly sliced
  • 1/2 pound pasta
  • Handful arugula
  • Salt and pepper
  • Grated Parmesan

Directions

  1. Set a large pot of water over high heat and bring it to a boil. Add the pasta and cook it as directed on the package.
  2. While the pasta cooks, add the vinegar to a large bowl. Whisk in the oil gradually, then season the mixture with salt and pepper. Add the corn, tomatoes, scallion, and arugula, and toss everything until it is lightly coated.
  3. Once the pasta is cooked, drain it and add it to the bowl with the dressing and vegetables. Toss well, letting the heat soften the arugula. Taste and season again with salt and pepper, then finish with a little grated Parmesan.
