Ingredients
- 3 eggs
- 1/3 cup water
- About 1 cup hot red pepper sauce
- 2 cups self-rising flour
- 1 teaspoon pepper
- 1 chicken, cut into pieces
- Oil, for frying, preferably peanut oil
- For the house seasoning:
- 1 cup salt
- 1/4 cup black pepper
- 1/4 cup garlic powder
Directions
- In a medium size bowl, whisk the eggs together with the water. Stir in hot sauce until the mixture turns a vivid orange. In a separate bowl, mix the flour with the pepper. Sprinkle the chicken with the house seasoning, then dip each piece into the egg mixture and cover it thoroughly with the flour mixture.
- Pour the oil into a deep pot and bring it to 350 degrees F. The pot should be no more than 1/2 full of oil.
- Cook the chicken in the hot oil until the coating is browned and crisp. Dark meat needs more time than white meat, about 13 to 14 minutes for dark pieces and around 8 to 10 minutes for white pieces.
- For the house seasoning, combine the ingredients and keep the mixture in an airtight container for up to 6 months.
