Peach Bran Muffins

Ingredients

  • 1 cup wheat bran bud cereal such as All Bran Buds
  • 1 1/4 cups buttermilk
  • 2/3 cup whole wheat flour
  • 2/3 cup flour
  • 1 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup sugar
  • 1 egg
  • 1/4 cup unsweetened apple sauce
  • 2 teaspoons canola oil
  • 1 teaspoon vanilla extract
  • 1 cup diced peaches, from about 1 large peach

Directions

  1. Set a rack in the center of your oven and heat it to 350 degrees F. Tuck paper liners into 16 muffin cups. In a small bowl, stir together the bran buds and buttermilk, then leave them alone for 5 minutes.
  2. Meanwhile, in a medium bowl, whisk the wheat flour, flour, baking soda, and salt, and put that bowl aside. In a large bowl, whisk the sugar and egg until the mixture gets foamy. Add the apple sauce, canola oil, and vanilla, and whisk again until everything is blended. Whisk in the buttermilk mixture.
  3. Add the dry ingredients to the large bowl and stir just until the batter comes together. Fold in the peaches. Spoon the batter into the muffin cups, filling each one 3/4 full. Bake until a cake tester poked into the center of a muffin comes out clean, about 20 minutes. Let the muffins sit in the pan for 10 minutes, then move them to a wire rack to cool the rest of the way.
