Ingredients
- 1/2 cup butter, softened
- 3/4 cup creamy peanut butter
- 1/3 cup granulated sugar
- 1/3 cup packed light brown sugar
- 1 large egg
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- Additional granulated sugar for rolling cookies in before baking
Directions
- Heat the oven to 375°F. Cover your baking sheets with parchment paper or silicone baking mats.
- Whisk the flour and baking soda in a medium bowl, then put the bowl aside for now.
- In a large bowl, beat the butter, peanut butter, granulated sugar, and brown sugar until the mixture looks pale and fluffy. Add the egg, milk, and vanilla extract, and beat until everything is blended. Add the flour mixture a little at a time, mixing only until the dough comes together; once it does, stop so the cookies stay tender.
- Shape the dough into 1-inch balls and arrange them on the prepared baking sheets, leaving about 2 inches between them. Gently press each one down a bit with your fingers or the back of a spoon. If you like, scatter additional granulated sugar over the tops before they go into the oven.
- Bake for 8-10 minutes, until the edges are lightly golden brown and the cookies still feel soft. Leave them on the baking sheet for 5 minutes, then move them to a wire rack to finish cooling.
