Peanut Butter Pretzel Rice Krispie Treats

Ingredients

  • 1/4 cup butter
  • 1 package miniature marshmallows
  • 1/2 cup creamy peanut butter
  • 1 tsp vanilla extract
  • 4 1/4 cups Rice Krispies Cereral
  • 1 1/2 cups coarsely crushed pretzel pieces
  • 1 cup milk chocolate chips
  • 2 Tbsp creamy peanut butter
  • 1/4 cup coarsely crushed pretzel pieces

Directions

  1. Butter a 9x13 dish and set it aside. In a large non-stick saucepan set over medium-low heat, melt the butter. Add the marshmallows, then cook while stirring the whole time until they melt. Take the pan off the heat and mix in 1/2 cup peanut butter and the vanilla.
  2. Add the Rice Krispies Cereal and 1 1/2 cups coarsely crushed pretzel pieces to the melted marshmallow mixture. Fold gently until the cereal and pretzels are coated all over. Scoop the mixture into the prepared 9x13 dish, then use a buttered spatula to coax it into an even layer.
  3. In a microwave safe bowl, melt the chocolate chips with 2 Tbsp peanut butter, using 30 second intervals and stirring after each one, until the mixture is melted and smooth. Transfer the chocolate mixture to a piping or ziploc bag, snip off the tip, and drizzle it evenly across the Rice Krispie Treats. Scatter 1/4 cup coarsely crushed pretzel pieces over the top, then enjoy them right away with the chocolate still melted, or cover and refrigerate until the topping sets.
