Peanut Butter Reese's Pieces Blondies

Ingredients

  • 8 tablespoons unsalted butter
  • 1 cup packed light brown sugar
  • 3/4 teaspoon salt
  • 3/4 cup peanut butter
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 cup roasted peanuts, chopped
  • 1 1/2 cups Reese's Pieces candy

Directions

  1. Set an oven rack in the middle position, then heat the oven to 375 degrees F. Line the bottom and 2 sides of an 8- by 8-inch pan with foil or parchment, leaving extra hanging over the sides so you can lift the blondies out later. Grease the pan lightly.
  2. Put the butter in a large microwave-safe bowl and warm it on low power until it has only begun to melt, about 30 seconds. Mix in the sugar and salt until everything comes together. Stir in the peanut butter, followed by the egg and vanilla. Add the flour and baking soda directly to the bowl, then mix just until incorporated. Fold in the peanuts.
  3. Transfer the batter to the prepared pan and even out the surface. Scatter the Reese’s Pieces over the top. Bake until the blondies are golden, barely set, and a toothpick poked into the center comes back with fudgy crumbs, 20 to 25 minutes. Cool them in the pan, about an hour, then use the lining to lift them out and cut into bars.
