Peanut Pralines
Roasted peanuts get wrapped in brown sugar candy for crunchy, salty-sweet pralines with a homemade caramel edge.
Prep 10 min · Cook 5 min · Total 45 min · Makes 16 pralines

Ingredients
- 1 cup light brown sugar, firmly packed
- 1 cup salted or lightly salted roasted peanuts
Directions
- Cover a baking sheet with parchment paper or a Silpat, and place it off to the side. Put the brown sugar in a small saucepan, and crumble any lumps with your fingers. Pour 1/4 cups of water across the sugar, tip the pan around to dampen it, and stir until the sugar has fully dissolved.
- Set the saucepan over medium high heat, swirling it from time to time so everything warms evenly. The sugar will start to foam and bubble hard. Keep cooking and swirling until a candy or instant read thermometer reads 230 degrees F.
- Take the pan off the heat and add the peanuts right away. Stir until they are coated, then promptly scoop the mixture in heaping tablespoonfuls onto the prepared pan, leaving 2 inches between the pralines.
- Let the pralines cool for 30 minutes, then serve. For leftovers, use an airtight container and keep them for up to 3 days.
