Pecan Encrusted Halibut

Ingredients

  • 4 halibut fillets
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper to taste
  • 1/2 cup finely chopped pecans
  • 2 tablespoons butter, melted
  • 2 tablespoons honey

Directions

  1. Set the oven to 375 degrees F (190 degrees C).
  2. Stir the honey and melted butter together in a shallow bowl. In a second shallow bowl, combine the pecans with the salt and pepper.
  3. Warm the olive oil in a large skillet over medium-high heat. Coat each halibut fillet first in the honey mixture, then press it into the pecans so both sides are covered. Add the fillets to the hot pan and cook for 3 minutes per side, until the coating is browned and the fish is cooked through.
  4. Move the fillets into a baking dish and place them in the heated oven for 10 minutes, until the fish separates easily when tested with a fork. Serve warm.
