Ingredients
- 1/4 cup salted butter
- 1 package miniature marshmallows
- 1/2 tsp peppermint extract
- 6 cups Rice Krispies cereal
- 1 3/4 cups white chocolate chips or milk chocolate chips
- 1/4 cup crushed peppermint candy canes
Directions
- Coat a 13" x9" baking dish with butter and put it nearby. In a large non-stick saucepan over low heat, melt the butter, swirling it up the sides of the pan to help keep the marshmallows from clinging. Add the marshmallows and stir without stopping until they are completely melted.
- Take the pan off the heat and mix in the peppermint extract. Fold in the Rice Krispies cereal gently, working until the cereal is coated all over.
- Transfer the mixture to the buttered baking dish. Using a greased spatula, spread it out evenly and press it lightly into the pan, then set it aside.
- Place the white chocolate or milk chocolate chips in a microwave-safe bowl and melt them at 50% power in 30 second bursts, stirring between each round, until the chocolate is smooth. Spread the melted chocolate evenly over the Peppermint Rice Krispie Treats.
- Scatter the crushed candy canes over the top. Cover the dish with plastic wrap and chill until the chocolate firms up, about 30 minutes, then cut into squares.
