Ingredients
3-4 lb. chuck roast
2 tablespoons olive oil
1 large onion, diced
3 cloves garlic, minced
2 tablespoons tomato paste
1/4 cup red wine or beef broth
1 teaspoon dried thyme
1 teaspoon dried rosemary
2 bay leaves
2 cups beef broth or stock
3 carrots, peeled and cut into 1 inch pieces
3 potatoes, peeled and cut into 1 inch pieces
Salt and pepper to taste
Directions
Preheat oven to 325°F. Season the chuck roast with salt and pepper. Heat olive oil in a large Dutch oven over medium-high heat. Add the chuck roast and brown on all sides, about 5 minutes per side. Remove from pan and set aside. Add the onion, garlic, potatoes, carrots, bay leaves, rosemary, thyme, red wine or beef broth and tomato paste to the pot and stir to combine. Place the chuck roast back into the pot and pour in the beef broth or stock. Bring to a boil then reduce heat to low and cover with a lid. Place in preheated oven for 3-4 hours until meat is tender and cooked through . Serve with your favorite sides! Enjoy!.
