Pineapple Jalapeño Margarita Mocktail
A bright pitcher drink with pineapple, lime, orange, and jalapeño heat, finished with bubbles and a salty chile rim.

Ingredients
- 2 tablespoons kosher salt
- 1 teaspoon Tajín seasoning
- 1 lime wedge, for rimming glasses
- 3 cups chilled pineapple juice
- 1 cup chilled orange juice
- 1/2 cup fresh lime juice
- 2 tablespoons agave nectar
- 1 small jalapeño, thinly sliced, plus more for garnish
- 2 cups chilled sparkling water
- Ice
- Pineapple wedges and lime wheels, for garnish
Directions
- Stir the kosher salt and Tajín together on a small plate. Run the lime wedge around the rims of your glasses, then dip the rims into the salt mixture and set them aside.
- In a pitcher, combine the lime juice, agave nectar, and sliced jalapeño. Press the jalapeño gently with a muddler or wooden spoon just until you smell the pepper, then stir in the pineapple juice and orange juice.
- Chill the pitcher until cold, or serve right away over plenty of ice. Just before pouring, stir in the sparkling water. Taste and add a little more lime juice if you want it sharper or a splash more pineapple juice if you want it sweeter.
- Pour into the prepared glasses and garnish with pineapple wedges, lime wheels, and extra jalapeño slices if desired.
