Ingredients
- 8 small flour tortillas
- 40 slices pepperoni
- 4 mozzarella cheese sticks
- Oil, as needed
- 1/2 cup pizza sauce, for dipping
Directions
- Heat the oven to 400ºF. Give a baking sheet a light coat of spray oil, or use a brush to spread on a thin layer of your favorite cooking oil.
- Set about 4 tortillas on a plate in a stack, then lay a damp paper towel over them. Warm them in the microwave for 20-30 seconds, just until they are hot, steamy, and easy to bend. Wait to microwave the second batch until you are ready to keep rolling.
- Cut each mozzarella stick lengthwise into half. Arrange about 5 pepperoni slices over the bottom 1/3 of each tortilla, then set a halved mozzarella stick over the pepperoni. Tuck the tortilla sides in over the ends, then wrap it snugly into a burrito-style roll.
- Transfer the rolled Pizza Roll Ups to the baking sheet with the seam facing down. Give them a little space so the heat can move around each one. Mist the tops with spray oil, or brush them lightly with oil.
- Bake the Pizza Roll Ups for 12-15 minutes, until they have a little color and the cheese is just starting to sneak out. Ovens like to have opinions, so start peeking at about 10 minutes, then check every 2 minutes or so until they are ready.
- Serve right away, with pizza sauce for dipping.
