Ingredients
- 4 very ripe plantains, peeled and sliced on the bias 1/2-inch thick
- 2 tablespoons vegetable oil
- 4 tablespoons light brown sugar
- 2 tablespoons fresh orange juice
- 1 tablespoon honey
- 2 tablespoons coarsely chopped cilantro
- Salt
- Freshly ground pepper
- Type of fire: two-zone indirect
- Grill heat: medium-high
Directions
- In a small bowl, stir together the brown sugar, orange juice, honey and cilantro, then put the mixture aside.
- Light 1 chimney of charcoal. Once the coals are fully lit and coated in gray ash, dump them out and arrange them in an even layer on the charcoal grate. Scrub the grilling grate clean and oil it.
- Coat the plantains with the oil, then set them over the hot side of the grill. Cook until both sides are caramelized, about 30 seconds to 2 minutes per side.
- Slide the plantains over to the cooler side of the grill and brush them all over with the brown sugar mixture. Cover the grill and cook until the plantains are fully soft without turning mushy, about 2 to 5 minutes more. Take them off the grill, add salt and pepper to taste, and serve.
