Plum Shrub Ginger Soda
A tangy plum-vinegar syrup turns ginger ale into a bright, fizzy drink with a sweet-salty rim.

Ingredients
- To make shrub:
- 1 cup chopped plums
- 1 cup apple cider vinegar
- 1 cup granulated sugar
- To make drinks:
- 1 liter ginger ale
- 2 tablespoons kosher salt, for rim
- 2 tablespoons granulated sugar, for rim
- Ice
Directions
- Add the chopped plums and apple cider vinegar to a bowl, then cover it with plastic wrap and let it sit in the refrigerator for 72 hours. If you prefer, a mason jar is just as handy here.
- Take the plum vinegar out of the refrigerator and pour it into a 2 quart pot. Stir in the sugar and keep it at a gentle simmer only long enough for the sugar to melt, about 5 minutes, then set it aside to cool.
- Once the syrup has cooled, set a sieve over a bowl and strain it, pressing firmly on the fruit to get out the extra juice. Move the strained syrup to the refrigerator until it is cool.
- Put a tablespoon of ginger ale on a saucer, then turn the rims of 4 serving glasses through it so they get damp. On a small plate, mix together the kosher salt and granulated sugar, then twist the glass rims through that mixture until coated.
- Add ice to the glasses, then pour 1/4 cup of plum shrub syrup into each one. Finish with ginger ale and serve right away.
