Ingredients
- 2 poblanos
- 8 corn tortillas
- Salsa
- Sour cream
- 1 tablespoon Canola oil
Directions
- For a gas stove, set the poblanos right over a medium flame. Turn them now and then as they cook, until the peppers are lightly charred on every side. If your stove is electric, or you would rather skip the stovetop drama, use the broiler instead.
- As soon as they’re ready, tuck the peppers into a plastic bag and let them sit in their own steam for at least 10 minutes. Take them out, rub away the skins, and slice the poblanos into long strips.
- Heat the oil in a small skillet, then add the pepper strips. Let them cook for about 5-10 minutes over medium-low heat.
- Warm the corn tortillas, 1 at a time, on a hot skillet. Spoon some peppers into each tortilla, then finish with salsa and sour cream.
