Pork and Chives Dumpling Filling
A savory pork and Chinese chive dumpling filling with ginger, Shaoxing wine, and a quick seasoning check before wrapping.
Prep 10 min · Makes about 40 dumplings' worth of filling

Ingredients
- 2 tablespoons vegetable oil
- 1/2 pound Chinese chives, finely sliced
- 1/2 pound fatty ground pork
- 1 teaspoon salt, or more to taste
- 1 tablespoon sugar, or more to taste
- 2 teaspoons Shaoxing rice wine
- 2 tablespoons pork stock or water
- About 1 teaspoon ginger, minced or grated with a microplane grater
Directions
- Combine all of the ingredients in a medium-sized mixing bowl, stirring until the mixture is evenly blended.
- To check the seasoning, put a 1/2 teaspoon-sized bit of the filling on a microwaveable plate and cook it in the microwave until it is done, about 10 seconds. Taste it, then add more salt or sugar to the bowl as needed.
- If you are not filling dumplings right away, cover the bowl with plastic wrap and chill it until you are ready to use it, up to 24 hours.
- To shape and cook the dumplings, use your homemade dumpling recipe and begin with the filling, folding, and cooking instructions.
