Ingredients
- For the magic dust:
- 1/2 cup paprika
- 1/4 cup kosher salt
- 1/4 cup sugar
- 2 tablespoons mustard powder
- 1/4 cup chile powder
- 1/4 cup ground cumin
- 2 tablespoons ground black pepper
- 1/4 cup granulated garlic
- 2 tablespoons cayenne
- For the pork chops:
- 4 thick-cut pork rib chops
- 1/2 cup magic dust, recipe above
- 1 tablespoon canola oil
Directions
- Put the magic dust spices into a container with a tight-fitting lid, then close it and shake until the mixture looks evenly blended. Massage 1/2 cup of the magic dust over every side of the pork chops, then leave them to sit while you get the cooking surface ready.
- Set up a grill for medium heat, or warm a ridged grill pan over medium heat. Grip a paper towel with tongs and use it to coat the grill grates or pan with the canola oil so the pork releases cleanly.
- Cook the pork chops on the grill until each side is nicely browned and the meat is cooked the way you like it, about 3-5 minutes per side for medium, with the exact timing depending on the thickness. Rest the chops for 3-5 minutes before you serve them.
