Ingredients
- 8 slices pre-cooked bacon, cut into pieces and browned in a frying pan.
- 8 pork sausage patties cut into pieces and browned in a frying pan.
- One large ham steak cut into cubes about 1/2 inch square
- 2 cups grated Mozzarella cheese
- 1 tsp. Spike Seasoning
- Fresh ground black pepper to taste
- 1/2 cup green onions, thinly sliced
- 12 eggs, well beaten so the whites and eggs are completely combined.
Directions
- Heat the oven to 375F/190C. Coat a large casserole dish with non-stick spray. An oval dish measuring 13" long and 10" across at the widest point works well, or use any casserole dish close to 9" x 13".
- Cut the ham steak into small cubes about 1/2 inch square, then cut the pre-cooked bacon, or raw bacon, and pork sausage patties into bite-size pieces.
- Warm a large frying pan over medium-high heat. Cook the bacon only until crisp, then spread it across the bottom of the prepared casserole dish.
- If you used raw bacon, pour off any excess fat from the pan. Add the chopped pork sausage and cook it until it just begins to brown, then transfer the sausage to the casserole dish.
- Scatter the diced ham over the bacon and sausage in the dish.
- Add the grated cheese in an even layer over the meat, holding back a few tablespoons for the top if you’d like.
- Sprinkle on the Spike Seasoning, or another all-purpose seasoning, and add fresh ground black pepper. Add the thinly sliced green onions over everything.
- Whisk the eggs until the yolks and whites are fully blended, then pour them over the meat and cheese.
- Use a fork to gently mix the casserole, then add the reserved couple tablespoons of cheese on top.
- Bake at 375F/190C until the casserole has set and the top is beginning to brown a little. Serve hot. Leftovers can be stored in the fridge for about a week and warmed in the microwave or in a pan on the stove.
