Raspberry Honey

Ingredients

  • 2 cups mild-flavored honey, such as clover
  • 2 cups fresh raspberries, rinsed and dried

Directions

Wash 2 half-pint jars along with their lids. Add the honey and raspberries to a medium saucepan, then set it over medium heat. Warm the mixture until it just reaches a boil, crushing the berries against the pan with the back of a spoon as they soften. Take the pan off the heat right away, and strain the honey through a fine mesh sieve into a bowl. Pour the strained honey into the prepared jars, using a funnel if that makes things neater. Leave the jars uncovered until the honey is fully cool, then seal them and store at room temperature for up to 1 year.
