Ingredients
- 2 cups all purpose flour
- 3 teaspoons baking powder
- 1/2 teaspoon cinnamon
- 1 teaspoon salt
- 1 stick unsalted butter, at room temperature
- 1 cup sugar
- 2 eggs
- 1 teaspoon grated lemon zest
- 1 cup pumpkin puree
- 1/3 cup milk
- 8 amaretti cookies
Directions
- Heat the oven to 350 degrees F. Grease a 9 inch springform pan with butter.
- In a medium bowl, combine the flour, baking powder, cinnamon, and salt with a whisk, then put the bowl aside.
- In a large bowl, beat the butter with the sugar until the mixture looks pale and airy. Beat in the eggs until everything is fully blended.
- Mix in the lemon zest and pumpkin puree until smooth. Add the flour mixture and beat only until it disappears into the batter, then beat in the milk.
- Set the amaretti cookies on a cutting board, then crush them finely with a rolling pin or a heavy pan. Fold the crumbs gently into the batter.
- Transfer the batter to the buttered pan and bake until a cake tester inserted in the center comes out clean, about 40 minutes.
